Water temp sensor.

I am getting strange readings from my water temp, I am riding a 08 R1, and aim for around 75-80, whilst going round slower corners, the temp shows just fine, but soon as I accelerate to any real speed the temp just drops right off, even going below ambient temps (lowest I saw was 6), obviously this is not correct, is there anything I should be checking, or could it be a faulty sensor?

check your wiring

check your sensor calibration
and for the sake of $17 Just replace the sensor as well

but first check your wiring
