The Excel Setup sheets are great for numerical setup data that you may want use with math channels, also for data that you just want to keep associated with a range of log files. Start by creating a Setup Sheet for a specific Dash/Vehicle using the I2 menu Tools->Setup Sheets...
There is a column for each setup sheet channel, you can duplicate columns and add your own channels. The times/dates in the first columns need to be in increasing chronological order, but you don't have to fill in every column, only when something changes. I2 Pro will find the date of a given data file, and find the latest setup data for that date (using previous setup data if necessary for some or all of the channels). These channels are available for you to display in reports, use in math channels (ie. use damper displacement x the fitted spring rate to approximate the sprung load). Apparently you can also use text values from fields (found this using the I2 Pro 1.1 Help file for Details).
I also use the vehicle details to keep some of this info as well (things like brake pad brand/compound, rotor thickness, damper valvings and adjuster settings). I like using the vehicle details as this can be prepared prior to an event. And it automatically carries forward unless I change it.
Weather info is best added into the appropriate fields created in the log file details available from within I2.
If you would like some help getting your setup sheets working properly, I am available to help via email / phone or shop visits.
