When are dash is upgraded to 500Mb and USB logging, does the data get logged in the dash and the memory stick if one is fitted ? If the USB stick isn't fitted, does it automatically log to the dash instead ?

It creates a log on both internal and USB, so when there is not USB it is still in the internal memory.
