So this is not a life or death situation, but an annoying thing that I would like to change (if possible) is the log not stopping recording after the car shuts off.
Here we are using the C1212 dash in our cars, the way MoTeC does it is that each log is divided everytime you download from the dash, so lets say we have a qualy session divided in Q1, Q2 and Q3, and I only download the files after Q3, I would get only one log file for the whole session instead of 3 separate ones. Some years ago we had to use Pi and it did exactly like the way I wanted, I would get a file for everytime the car would turn off the ignition.
So is there any option I can change on the dash?

no way to change it in the dash, but splitting your single file into multiple files is very easy.

Open file in I2.
Use F2 key to show entire session.
Put cursor between sessions you want to split.
Use File->Split Data to make new data files (note - you can edit to change comment to indicate session)
