Can the 8v output be recalibrated in the channel graph to output 5v instead of 8v? I installed another sensor that needs 5v but i have the 8v slot empty and it would be easier to pop in a term instead of splice into the 5v...

No you can't change the output voltage -- it's a regulated 8V, but you could use a voltage divider to reduce the voltage -- but that's more difficult than splicing the 5V wiring.
