Hi Bob,
To be honest, it isn't an area that we test on the throttle bodies when we do a calibration for them, as this would require the TB's to be run on a flow bench to generate the numbers. With the Throttle Area table, you can leave this as a linear graph, and it will work, as you have found, or you can change it to suit.
This table also allows for you to change the feel of the throttle, so you can make the throttle response quicker or slower by having the throttle plate open at a non linear rate to the throttle pedals movement.
