I'm wondering if these EGT wires can be cut/ shortened and passed though an Autosport connector on the firewall. They'll be going to a Race Grade TC8 mounted inside the car.

Yes it can be done provided you use the correct terminals. They need to be Alumel and Chromel and they are available in size 22 for the standard AS connectors. Note wire needs to be proper "compensation cable" also to minimise cold junction error.

The extension wire (and connector terminals if possible) needs to match the TC type. T, K, J etc. all use different wire.
You can get TC type specific bulkhead connectors.
